This preparation, called açili esme, is a simple blend made with yogurt and garlic, a spiced-up cacık (previous recipe). You eat it with pieces of bread and scallions, but I also loved to dip köfte into it.

Ingredients

  • 1 teaspoon salt
  • 4 large garlic cloves, peeled
  • ¾ cup full-

Method

  1. In a mortar, pound the salt and garlic together until mushy.
  2. In a small bowl, blend the mushy garlic with the yogurt, labna, cayenne, and dill. Drizzle with a small amount of olive oil and serve with scallions and good French bread.
