This bean salad, or fasolakia salata, is seasoned with fresh dill and served at room temperature as a meze. Do not be tempted to add too much feta cheese; it should be minimal.
Bring a large saucepan of water to a boil and blanch the green beans for 5 minutes. Drain and cool under cold running water to stop their cooking (this will preserve their color). Bring another large saucepan of water to a boil again and cook the green beans until tender, not crunchy, 12 to 15 minutes. Drain well.
