This preparation is called ezme salatası and is excellent as an accompaniment to grilled food, although I was first introduced to it as a meze. In this recipe, “very finely chopped” means about the size of this “O.” I’ve tried this in a food processor, but even pulsing doesn’t work; it just makes it too liquidy and mushy. You’ve got to do this by hand for a perfect result.
