This Tunisian preparation is called macqūda bi’l-baţāţa and, although it looks like a huge amount of parsley goes into this frittata, it is actually just perfect. This is a delightful preparation and very satisfying and hot, too, since it contains a healthy amount of cayenne. Some cooks make this dish with the addition of cheese and bread crumbs.
