Kubba maqliyya (ma shiyya), a lamb-and-bulgur mixture ground to a paste and formed into a hollow ball for stuffing, is often considered to be the national dish of Lebanon and Syria. The word kibbe comes from the Arabic verb “to form into a ball.” The perfect kibbe is considered the apex of the culinary art in the Arab world. The hardest thing to achieve is forming the ball of kibbe into a long, hollow, smooth-skinned oval shell.
