In spice shops in Morocco, the premier blend is known as rās al-hanūt, literally “head of the shop.” This blend may contain up to twenty-seven different spices, but each merchant has a different-tasting blend because measuring is inaccurate and the spices themselves can vary in intensity and flavor, depending on how old they are or where they came from.
