These kafta, ground meat molded by hand around a sword-like skewer and grilled, are typical street food in Morocco. Sometimes they are served as a meze. These particular skewers are called qu bānis diyal kafta and are more boldly spiced than the following recipe. This particular spice mix is just one you could use; cooks often will concoct their own. The meat should be well mixed or kneaded; the best way to do this is in a food processor. Serve with warm flatbread, if desired.
