Palestinian Shepherd’s Salad

This salad, called salāţat al-khudr, meaning simply “vegetable salad,” is a name found throughout the Middle East in a variety of forms, but for some reason it’s thought of as a shepherd’s salad. In this preparation, romaine lettuce is the central vegetable, but it is tossed with a variety of other vegetables that, when allowed to rest for a while, will turn the salad soupy, which is not how some people like it.
