In this easy recipe, young organic or farmstand carrots are cooked very slowly in a few tablespoons of liquid in a closed clay pot, causing them to steam in their own moisture and ultimately glaze in their naturally released sugars. The carrots turn melt-in-your-mouth tender while retaining their structure, and the slower the cooking, the sweeter they will be.
