This is similar to the semolina bread I grew up on, the bread my mother purchased from the Sicilian-American bakery in our Brooklyn neighborhood. Sicilian bread is made with a mixture of fine-ground semolina, extra fine-ground durum, and unbleached bread flours, which gives it a pale yellow color and unique nutty flavor. The color may remind you of brioche, but the bread contains no eggs or butter, just a few tablespoons of olive oil added for richness and elasticity.
