  • 200 g/7 oz gudgeons, cleaned and gutted

Method

Toss the gudgeons in flour. Heat 75 ml/3 fl oz oil in a frying pan, put in the fish and fry until crisp, crunchy and golden. Lift them out of the pan and lay them on kitchen paper to absorb the oil. Keep t
