  • 4 trout, about 350 g/12 oz each, cleaned, gutted and skinned

Method

Lightly flour the trout and wrap each in 4 rashers of bacon. Season with pepper.

Heat the oil in a frying pan until very hot. Lower the heat slightly, put in the trout and add 50 g/2 oz butte
