Ingredients

  • 700 g/ lb very small gherkins
  • 10 black peppercorns

Method

Wipe the gherkins with a clean cloth and place in a jar with the peppercorns and tarragon. Pour in the vinegar, seal the jar and leave for a month before eating the gherkins. If you like, you can add some garlic, chives or small shallots for extra flavour.
