Fold the sheets of greaseproof paper to make a double thickness and brush with duck fat. Cut each in half to give you 4 squares large enough to enclose a quail.

Season the quails, put a few drops of armagnac inside each one and wrap in the greaseproof paper, folding over the edges to seal.
