Method

Preheat the oven to 180°C/350°F/gas 4. Heat the butter in a saucepan and cook the courgettes until mushy, adding the garlic and parsley 1 minute before you stop cooking. Mash the courgettes, then place in a piece of muslin and squeeze out as much water as possible to leave a solid puré
