  • 2 eggs
  • 450 g/1 lb caster sugar

Method

Preheat the oven to 200°C/400°F/gas 6. Mix the eggs and sugar until creamy. Add the butter, lemon zest, salt and flours and stir very well. Shape into walnut-sized balls and place, spaced well apart, on a greased baking sheet.
