Method

Preheat the oven to 200°C/400°F/gas 6. Heat the fat in a flameproof casserole. Season the veal and seal it in the hot fat until golden brown all over. Add the ham or bacon rind and sweat gently for 10 minutes. Add the onions, cover the casserole and sweat very gently for another 45 min
