  • 4 pork rib chops
  • 50 g/2 oz duck fat
  • 75


Heat the duck fat in a frying pan, put in the chops and cook for 4 minutes on each side. Transfer to a dish and keep in a warm place.

Tip off half the fat from the pan, add the onions to the pan and cook until soft. Add the thyme and garlic, cover and cook for about 8 minutes until soft.

Place the chops on the vegetables and heat through for 3 minutes. Check the seasoning, stir
