  • 1 calf’s tongue
  • 1 small bouquet garni
  • salt and freshly ground pepper

Method

Pour 7 l/12 pt water into a huge pot, add the tongue and boil for 20 minutes, skimming the surface very thoroughly until it is quite clear. Add the bouquet garni, season and simmer gently for 1½ hour
