This awesome sandwich was inspired by a street-food vendor who was parked beside the magnificent Blue Gate in Fez, Morocco. It was a freezing-cold morning, and this wicked sandwich, packed with crunchy onions, spices and fresh herbs, was the perfect way to warm up. My version uses chicken instead of offal (sorry Fez) but it shares the big flavours.
