These lovely little sliders (small burgers) are so tasty and quick to make. Using a really good-quality pork sausage means that the meat is already the perfect consistency to incorporate all the fragrant Thai seasonings. A fresh lime hit at the end accentuates the flavours, and the sweet chilli sauce is the perfect dunking partner.
PEEL THE GINGER and garlic, then remove the tough outer leaves from the lemongrass and cut off the ends of the stalks. Put the ginger and garlic into a mini food processor, and add the lemongrass, chilli, black pepper, basil and fish sauce. Blend into a smooth paste. Scoop the paste into a mixing bowl and leave to one side.
