To me, hummus rocks! My Hummus Beiruti is a slightly tarted-up version of the awesome dip. I make a deliciously light hummus, then top it with lovely sweet lamb that has been fried, super-fast, with allspice, cumin and cinnamon. The hit of spiced lamb melts through the hummus and makes it even more unbelievably tasty. This is ready in less than 10 minutes, so there’s always time for a bit of happy hummus eating.
