For my version of the classic Indian snack, grilled paneer, I have added a little coconut to the chutney, as it works so well with the mint, chilli and ground coriander. It also seems to bring all those fresh ingredients together so that their flavours combine into something new. Mr Paneer Wallah on Uah Kham Murg in sunny Mumbai – I hope I have done you proud.
