At the moment, baked eggs are very trendy, and for good reason – they are delicious and require little effort. My baked eggs sit on a base of lentils, sage, chilli and spring onions. I have added sun-dried tomato paste and paprika to introduce even more flavour without taking up any extra time. A final crumble of salty goat’s cheese, which melts into the eggs while they finish cooking, tops everything off perfectly.
