This was my breakfast in a little Parsi café in Mumbai after a long overnight train journey from Goa. The eggs were Indianed up with loads of spices and mixed with vegetables and fresh coriander. It was the perfect start to the day in that magnificent city.
CRACK THE EGGS into a mixing bowl and add the chilli powder, ground coriander and garam masala. Season with a good pinch of salt and whisk together. Leave to one side.
PEEL THE GARLIC and trim the spring onions, then finely chop the garlic, spring onions, tomato and coriander leaves. Leave to one side with the coriander in a separate pile. Put the bread in the toaster to toast while you
