CUT THE UNPEELED POTATOES in half, then cook them in a large saucepan of boiling water for 10–12 minutes until tender. Drain and leave in the colander.
MEANWHILE, REMOVE THE TOUGH outer leaves from the lemongrass and cut off the ends of the stalks. Peel the garlic and cut the top off the chilli. Chuck the lemongrass, garlic and chilli into a mini food processor, and blend into a paste.<
