PEEL AND FINELY CHOP the onion and garlic, then peel the carrot. Chop the carrot and courgettes into 1cm/½in half-moons. Heat the oil in a large saucepan over a high heat and add the carrots and courgettes. Cook for 4 minutes, stirring frequently, to soften.
