CUT THE TOP OFF 1 of the chillies, then slice the chilli. Peel the garlic, then slice 3 of the garlic cloves. Heat 3 tablespoons of the oil in a large frying pan over a medium-low heat and add the sliced chilli and garlic. Mix well and cook, stirring occasionally, while you prepare the aubergines.
