Coconut and mango are best mates and appear in various guises in South-east Asian desserts. These fresh little puddings are inspired by the many varieties I have eaten over the years. I have made my version to be as quick as possible without cutting back on any flavour. The mango is squished together with sugar and orange to soften it and intensify the taste. The sweet fruit is then topped off with luscious cream that has been whipped with coconut cream to add that authentic Asian twist.
