Express cooking even means baking. Vanilla, orange and almonds make the base of my spongy cakes, which soak up the yummy marmalade and ginger glaze. I prefer to use a slightly sweet marmalade to make my glaze, so the cakes take on that flavour as well.

Method

PREHEAT THE OVEN to 200°C/400°F/Gas 6. Crack the egg into a large mixing bowl and add the 150 g/ oz
