For the dough

  • 10 g brewer’s yeast
  • 10 g salt
  • 10

Method

Dissolve the yeast, salt and sugar (if using) in a little of the water.

Put the flour in a large bowl and add the yeast mixture and remaining water, mixing quickly and energetically until a dough is formed.

Transfer the dough to a floured work surface and knead for 15 minutes until elastic and no longer sticky. Form into a ball and leave to rest in a bowl, covered with a cloth,
