For the pasta

  • 400 g plain flour
  • 100 g durum-wheat semolina
  • 2

Method

To make the pasta dough, mix together the flour, semolina, eggs, oil and a pinch of salt on a work surface. Add enough water to obtain a smooth dough, then leave to rest for at least 30 minutes.

Meanwhile, prepare the filling. Soak the sultanas in warm water until soft then drain, squeeze out and chop. Mince the parsley. Finely chop the roast beef. Melt the butter in a large frying pan
