Heat 250 ml broth in a saucepan. Stir in the breadcrumbs, remove from the heat and leave to sit for 15 minutes. Stir in the butter and remaining broth and heat over medium heat for 5 minutes, stirring to avoid lumps forming.
Beat the eggs with half the grated Grana then add them to the breadcrumb mixture, beating with a fork to bring everything together.
Adjust the salt and pepp
