  • ½ white onion
  • 3 cloves
  • 1 small carrot

Method

Put 4 litres water in a deep, large pot and put over high heat.

Peel the onion and stick the cloves into it.

When the water comes to a boil, add ingredients in the following order: carrot, onion with cloves, flank, cheek, bone, shoulder, tongue, chicken carcass and lastly salt. Return the water to a boil and leave to cook for at least 3–4 hours. Taste the broth and check the don
