Method

Trim off the capon’s neck, feet, liver, gizzard and internal fat and use these to prepare a light broth.

Put the celery, carrot, onion, garlic, bouquet garni, peppercorns and a pinch of coarse salt inside the capon’s cavity. Sew closed and tie the wings and legs close to the body.

Soak the bladder in a mixture of water and vinegar and wash carefully, allowing it to soften. Caref
