Chop the carrot, celery and onion.
Heat a drizzle of oil in a heavy saucepan, then add the carrot, celery, onion and wine. Bring to a boil then add the donkey meat, bay, garlic, juniper berries, cloves and cinnamon. Cook for around 2 hours, adding broth as necessary and adjusting the salt and pepper at the end.
Remove the meat from the cooking liquid and break up by hand. Puree
