  • 3 kg kid goat meat
  • 300 g butter
  • 1 rosemary sprig

Method

Cut the kid meat into small pieces and put it with the butter and rosemary in a heavy saucepan. Season with salt and pepper and put over high heat. Sauté until browned, then add the wine, cover and cook for around 3 hours, stirring occasionally.

Serve with hot polenta.
