Mince the onion, carrot and celery and sauté with the garlic in a little oil in a heavy saucepan. Add the ribs, season with salt and pepper, then add the mushrooms and broth. Leave to cook, uncovered, for 30 minutes.
Cut the cabbage into strips. Add to the saucepan and cook for another 30 minutes.
Mince the parsley. Before serving, sprinkle over the minced parsley.
