Harissa Tamales and Buttered Corn

I first discovered tamales while training in New York and I recall asking my teacher at the time to name his favourite thing to make – the answer was tamales. Tamales are dishes from South America and are an incredible street food made from corn masa (flour). I think of them as South American ‘pasties’ and there are so many different filling options.
