New Yorkers love their Chinese American food, and nothing feels more like the city’s perfect hybrid than the classic sesame noodles. This version is a totally untraditional riff that utilizes tahini, since it is ubiquitous and gives the perfect simple sesame hit. Serve this hot or cold and have a quick simple meal that feels luxurious.
Bring a pot of heavily salted water to a boil. Cook the noodles according to the directions (some might take as little as two minutes and others longer, so take that timing into account).
While your water is coming to a boil and/or noodles are cooking, make your sauce. Put the vinegar, soy sauce, peanut butter, and tahini in a bowl and fully combine. Chop the scallions and the cucumber.
