I love a good quesadilla stuffed with cheese, but sometimes you need to liven things up (and maybe even try and make them a little more of a full balanced meal). With hummus, you get all the creaminess of cheese, but with a new flavor combination. This is a simple weeknight meal that is as easy as it gets.
Warm a large skillet on medium heat and brush on a very light coating of olive oil. Lightly chop the artichoke hearts. On the first two or three tortillas, spread the hummus evenly. Cover half of each tortilla, moderately, with some spinach, artichoke hearts, and a dash of salt. Fold the uncovered half on top to make a half-moon shape.
