I have nothing else to say apart from my mum loves this, so you will too. It’s nutty, it’s fresh, and the crunchiness of the carrot with the zesty peanut dressing makes this an absolute winner.

Ingredients

  • 3-4 medium carrots
  • 80 g frozen edamame beans
  • 3 spring onions</

Method

  1. Wash the carrots, then grate them using a box grater on the biggest-size holes you can. You essentially wanted good strands of carrots. Once you’ve got your carrots grated, pop them into a big bowl appropriate for salads.
  2. Soak the edamame beans in a heatproof bowl of boiling water for 5 minutes.
