Ingredients: salt and pepper; a small handful of fresh basil (optional); salt and pepper; 2 tbsp apple cider vinegar; 5 tbsp tahini; 150 g spinach, washed please (do you live at a festival?); 1 x 400 g tin chickpeas; baking paper (not an ingredient but something you may have to go to the shops and get); 150 g tenderstem broccoli; 50 g frozen edamame beans; 4 tbsp extra virgin olive oil, plus extra for roasting; 2 baby shallots or 1 banana shallot (if you can’t find either, ½ red onion works); 2 baby shallots or 1 banana shallot (if you can’t find either, ½ red onion works); 2 lemons, plus more if you want to finish the salad with it; 2 baby shallots or 1 banana shallot (if you can’t find either, ½ red onion works)

I’ll be upfront: I’m not a salad man. If there was a side option, it would have to be fries, I don’t care if that upsets the spinach lovers. But this is exactly the reason why: when I do make a salad, I want to make it a brilliant one, one I can enjoy and be floored by, and this is definitely one of those. And a sharp vinaigrette? Should be on all salads if you ask me.
