A beanie burrito is something I think most vegans find themselves making when they fancy a quick burrito. This is also an ode to my cousin Sam, who trademarked these as the ‘Triple Bs’ - banging beanie burritos. One for when you’re super hungry.

They’re spiced up and beanie.

Ingredients

  • 4 spring onions
  • 2 garlic cloves
  • 2 tbsp light olive oil, for frying

Method

  1. Chop up the spring onions and garlic into thin slices, and keep back the green parts of the spring onion for the end. Then fry them in light olive oil in a large frying pan for 3-4 minutes until softened. Salt and pepper these.
  2. At this point, rinse and drain the black beans and jackfruit in a colander, and chuck those in the frying pan along with the ground spi
