Orzo is essentially pasta and rice’s lovechild. And I am a big fan of it. It’s not only a great flavour carrier but it also cooks well in stocks, as opposed to the regular standard boiling water and salt. This pea and mint orzo dish brings back the memories of my favourite soup, but merges them with my love of risotto. Lo and behold, a brilliant orzo. Also, a one-pot dish, so you know.
It’s basically a risotto, except it isn’t.
