A raita is a brilliant and fresh yogurty side that is great for pimping up your curries and for dipping your naans in. Mine isn’t only vegan but Steve Jobs’ favourite fruit makes an appearance too; the apple.

It has a secret ingredient.

Ingredients

  • ½ cucumber
  • ½ apple
  • 15 g fresh mint leaves
  • juice of <

Method

  1. Leaving the skin on, grate the cucumber and apple onto a clean tea towel, then wrap up the towel and squeeze as much water out as you can. Pop it into a food processor once complete.
  2. Pop the mint leaves into that food processor with the cucumber-apple mix. Peel the garlic clove and add that in, then go in with the vegan yogurt, lime juice and a pinch of salt an
