The name of this bread refers to the style of bread rather than the rye content. It’s the bread to turn to for a sandwich or for toast; imagine the offerings of a New York deli between thick slices. The closer crumb and lower hydration of this loaf compared to The Margot means it can be sliced for sandwiches a couple of hours out of the oven. We fill it with our famous egg mayo with chives, capers and dill, Cheddar and roasted courgette with basil or smoked salmon and cream
