Marta worked at Margot from the first day we opened on 14 February 2016; I interviewed her amongst the piles of boxes while the builders finished the last of the works. The plan was that she would work part time as a barista and possibly make some pastry, in the future, as she had experience in both. But even before we opened it was clear that the bakery needed her pastry skills most of all and she became the full time pastry chef within three weeks.
