Red onions are intensely flavorful—sweet and pungent, with a crisp, clean texture. Since raw onion, unfortunately, has a lingering aftertaste, I make these pickles to mellow that sharpness while infusing the onions with warm spice notes. You can use them in place of raw onion in salads and on sandwiches.
