Nut brittles are a classic candy–the roasty, toffeelike notes in most nuts are a natural match for the burnt sugar. I like using pistachios because they have a pronounced flavor that isn’t overwhelmed by the caramel, while the spices lend a bit of depth. I serve these as a sweet snack or easy dessert.
